Is there a way to run a simulation in Modelsim® and later display signals that were not displayed?

By setting up logging before the simulation is run, signals that were not displayed on the wave screen can be displayed after the simulation is run. 
Note, however, that this will increase the size of the wlf file.

Commands can be set on a module-by-module basis. 
To log all signals, enter 
log -r /*
